We believe that decaf should deliver the same smooth, rich flavor that you'd expect from any of our craft roasts. We’re proud to say that many customers don’t even realize they’re drinking decaf until we tell them.

The Secret Is in the Process

If you’ve ever wondered how decaf coffee is made, the answer lies in the method used to remove the caffeine. There are a few common techniques in the coffee industry, but not all of them are created equal. Some use chemical solvents like methylene chloride or ethyl acetate to strip caffeine from the beans. While these are approved by the FDA, we believe there’s a better way.

At Java City, we use the water process decaf method. This is a chemical-free, gentle approach that preserves the integrity of the bean and its flavor profile. In this method, green coffee beans are soaked in water to draw out the caffeine. The water is then filtered to remove the caffeine molecules while retaining the oils and flavor compounds. The beans are reintroduced to the filtered water, absorbing all the good stuff without the jitters.

This process is not only better for your health, but also for your taste buds. It allows us to keep the natural flavor intact, resulting in a cup that’s bold, clean, and deeply satisfying.

At Java City, we start with premium Arabica beans sourced from ethical, sustainable farms. These beans are selected for their unique flavor notes, which remain pronounced even after decaffeination.

From there, our master roasters carefully develop the roast profile to highlight those natural notes—think chocolate, caramel, and nutty undertones. Our decaf roasts aren’t just good for decaf—they’re just plain good.
